Bhindi(okra)fry recipe

Here’s a simple and delicious recipe for frying bhindi (okra):

Ingredients:

  • 250 grams bhindi (okra), washed and sliced
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 medium-sized onion, finely chopped
  • 2 green chilies, slit (optional)
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves, chopped (for garnish)

Instructions:

  1. Preparation:
  • Wash the bhindi thoroughly and pat dry with a kitchen towel. Make sure there is no moisture left as it can make the bhindi sticky.
  • Slice the bhindi into 1-inch pieces.
  1. Cooking:
  • Heat oil in a pan or kadai over medium heat.
  • Add cumin seeds and let them splutter.
  • Add the finely chopped onions and sauté until they turn golden brown.
  • Add the slit green chilies and ginger-garlic paste. Sauté for another minute until the raw smell goes away.
  • Add the sliced bhindi and mix well.
  • Sprinkle turmeric powder, red chili powder, coriander powder, and salt over the bhindi. Mix well to coat the bhindi evenly with the spices.
  • Cook the bhindi on medium heat, stirring occasionally, until it becomes tender and slightly crispy. This may take around 10-15 minutes.
  • Once the bhindi is cooked, sprinkle garam masala and give it a final mix.
  • Garnish with freshly chopped coriander leaves.
  1. Serving:
  • Serve hot with chapati, roti, or as a side dish with rice and dal.
