Here’s a simple and delicious recipe for frying bhindi (okra):
Ingredients:
- 250 grams bhindi (okra), washed and sliced
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 1 medium-sized onion, finely chopped
- 2 green chilies, slit (optional)
- 1 teaspoon ginger-garlic paste
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves, chopped (for garnish)

- Preparation:
- Wash the bhindi thoroughly and pat dry with a kitchen towel. Make sure there is no moisture left as it can make the bhindi sticky.
- Slice the bhindi into 1-inch pieces.
- Cooking:
- Heat oil in a pan or kadai over medium heat.
- Add cumin seeds and let them splutter.
- Add the finely chopped onions and sauté until they turn golden brown.
- Add the slit green chilies and ginger-garlic paste. Sauté for another minute until the raw smell goes away.
- Add the sliced bhindi and mix well.
- Sprinkle turmeric powder, red chili powder, coriander powder, and salt over the bhindi. Mix well to coat the bhindi evenly with the spices.
- Cook the bhindi on medium heat, stirring occasionally, until it becomes tender and slightly crispy. This may take around 10-15 minutes.
- Once the bhindi is cooked, sprinkle garam masala and give it a final mix.
- Garnish with freshly chopped coriander leaves.
